Week 50 Day 1

WOW, I started this thing almost a year ago.  Time flies by when you’re having fun.

AM:
22 min jog 2 miles
40 min elliptical machine

PM:
weights
4 sets assisted pull-ups
7 sets incline bench press
6 sets leg press
8 sets ez-bar curls

Food was off the charts today. My nutritional ratios were really off but I had some incredible food. I did a regular breakfast, but for lunch I made a pesto pasta salad with pepper, onion, black olives, mozzarella cheese,  spinach, tomatoes and mushroom.

Then for dinner I made a casserole of “stuffed peppers”  Instead of stuffing peppers I cut them into strips and covered them with the tomato, rice and veggie filling.  I used Morningstar Meal starters crumbles in place of ground beef in the stuffing.

I actually went all day without eating any meat.  I did not plan it that way, it just happened.  There was a time my wife and I would try to do a meatless dinner from time to time.  Those meals usually ended up being a heavier pasta meal with ricotta or cottage cheese added for protein.  The meals today were all heavy ones so tomorrow will be lighter for sure.
