Week 36 Day 2

I jogged with my wife this morning!

It was rough getting up that early when I did not need to but I am glad I did.  We did our 3 mile loop and we were fast.  We did it in 30 minutes and change.  Since I was awake and too sweaty to go back to bed I headed to the gym for bonus cardio.  I went ahead and did another mile on the treadmill and then 20 minutes on the elliptical machine.  Good stuff.  I came home, ate breakfast and watched some TV then took a nap.

I worked on unemployement stuff for the rest of the morning and treated myself to some video gaming at lunchtime.  I also got a hair cut today to keep myself groomed.  Just because I am unemployed does not mean I need to look homeless!  (just some humor, take it easy Francis).

My afternoon workout was 60 minutes on the elliptical stepper machine alternating 5 minute segments between elliptical strides and stair stepping strides.

Diner was amazing but a lot to digest.  I got some big italian bread and toasted it in the oven with some smart balance and garlic powder.  I then cooked down 1.5 bags of baby spinach, a skinned eggplant and some mushrooms.  I made chicken parmesan with baby spinach on one half, and eggplant parmesan with mushrroms on the other side.  I had added a thin layer of part skim ricotta cheese on each side for bonus protein.   The meal was amazing.  It was like pizza, open face italian sandwiches and healthy foods all combined.   Of course there was too much bread.  But it was a sandwich inspired meal so duh, there had to be bread. Here is what the meal looked like as I made it.

I originally thought this was going to be something that would be folded up as a sandwich but there was no way that would work.  Each half was too thich on its own.  This may not have been my most healthy meal I have made in a while, it was not all bad either.  Chicken breast, spinach and eggplant all were good.  I used skim or reduced fat for the cheeses and the eggplant was not breaded or fried.  This would have been a great meal to share with family
